Ingredients
  

  • 2 15 oz cans black beans, drained and rinsed
  • 8 corn or flour tortillas
  • 2 tablespoons olive oil
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 2 tablespoons taco seasoning
  • 1 lime juiced
  • Salt to taste
  • Toppings of choice

Instructions

  • ❶ Heat olive oil in a large skillet over medium heat.
    ❷ Add diced onion and cook until translucent (about 5 minutes).
    ❸ Add minced garlic and cook for another minute until fragrant.
    ❹ Add drained and rinsed black beans and taco seasoning. Cook for 5-7 minutes, stirring occasionally.
    ❺ Slightly mash some of the beans with the back of a spoon for texture variation.
    ❻ Add lime juice and salt to taste.
    ❼ Warm tortillas in a separate pan or microwave.
    ❽ Assemble tacos with bean mixture and desired toppings.
